8 oz. baby spinach greens
3 tbsp. balsamic vinegar
1 tbsp. Dijon mustard
1 tsp. orange zest
1 tbsp. orange juice (from squeezed orange)
½ teaspoon ginger, freshly grated
Salt and pepper to taste
Pinch red pepper flakes
Whisk ingredients together and toss with baby spinach or mixed baby greens.
